Sante Fe Style Corn and Rice Salad
| Ingredients |
| 1 (13.0 oz.) jar of Corn Relish, undrained |
| 3 cups white rice, cooked |
| 2 cups smoked turkey breast, diced |
| 1/2 cup salsa or picante sauce |
| 1/2 cup green onions, sliced |
| 8 lettuce leaves |
| 1/2 cup cilantro, chopped (optional) |
| Combine rice, corn relish, turkey, salsa, and green onions; mix well. Cover and chill. Serve on lettuce leaves and sprinkle with cilantro. |
