Rainbow Farfalle with Creamy Clam Sauce
| Ingredients: |
| 8 ounces Chopped white onion |
| 4 ounces minced garlic |
| 8 ounces minced fresh parsley |
| 4 pounds chopped clams, no juice |
| 4 ounces white wine |
| 4 ounces olive oil |
| 1 gallon heavy whipping cream or prepared white sauce |
| 1/2 ounce ground nutmeg |
| 1/2 ounce black pepper |
| 1/2 ounce salt |
| 8 ounces grated Parmesan cheese |
| Directions Drizzle oil uniformly on bottom of full size baking pan. Add all other ingredients except for Parmesan and cream. Stir well and bake covered in 400°F preheated oven for 30 minutes. Add cream and cook 30 minutes longer. Mix with hot pasta and serve topped with Parmesan cheese. Servings 50 |
