Rotini Salad
Ingredients:
16 ounces Dakota Growers Rotini
1/2 cup broccoli florets
1 cup cherry tomatoes
1/2 cup black olives
1/2 cup red onion, chopped
1/2 cup carrots, sliced
1 bottle (8 ounces) Italian dressing
1 tablespoon lemon juice
1/2 cup Mozzarella cheese, cubed
1/2 cup Parmesan cheese
Directions Wash and drain vegetables well. Cut tomatoes and olives in halves. In medium bowl combine all vegetables with dressing and lemon juice; set aside. Prepare pasta according to package directions, drain and rinse in cold water. Shake excess water off pasta, toss with vegetables and cheeses in bowl. Refrigerate 1 hour before serving. Servings 4
