Four Seasons Rotini Salad
Ingredients:
16 ounces Dakota Growers Four Season Rotelle
1 head broccoli florets
12 ounces chicken breasts, cooked and cubed
2 medium tomatoes
1/3 cup green onions, chopped
6 ounces black olives, sliced
6 ounces walnuts, chopped
DRESSING INGREDIENTS
3 cloves garlic
1/4 cup fresh basil leaves
1/3 cup fresh Parmesan cheese
1 1/2 teaspoons sugar
1 tablespoon dry mustard
3 tablespoons lemon juice
1 tablespoon balsamic vinegar
2 teaspoons salt
1 teaspoon black pepper
1/2 cup olive oil
Directions Prepare pasta according to package directions. During the last minute of cooking pasta, add broccoli florets to blanch. For the Dressing: Mince garlic in a food processor. Add remaining dressing ingredients in food processor and process until slightly thickened. Toss dressing with salad ingredients. If salad becomes dry, drizzle a small amount of olive oil to moisten. Servings 8
