Rotini in Insalata
Ingredients:
1 pound Organic Rotini
1 8 ounce package Organic spinach
1 8 ounce package Organic mushrooms
1 cup chopped walnuts
2 teaspoons minced fresh garlic
1/2 cup crumbled blue cheese
1/2 cup olive oil plus 1 teaspoon
1/2 cup chopped red onion
1/2 cup lemon juice
1/2 teaspoon each salt and pepper
Directions Cook pasta in large kettle of water according to package directions. Drain pasta and immediately rinse under cold water. Stir well, adding 1 teaspoon of oil to it. Let rest. Rinse and chop spinach coarsely. Place in bowl and add all remaining ingredients, including cooled pasta. Toss well and chill 1 hour prior to serving. Servings 4
