Organic Rotini Salad
Ingredients:
16 ounces organic rotini
1 cup black beans
1 tablespoon fresh chives
1 tablespoon fresh cilantro
1 orange, sliced in wedges
1/4 cup gold raisins
1/2 cup olive oil
1 tablespoon balsamic vinegar
1/2 cup plain yogurt
1 tablespoon lemon juice
1 teaspoon salt and pepper
Directions Whisk oil, vinegar, lemon and yogurt together until emulsified. Cook pasta according to package directions. Drain at once and chill shock it. Drain well, toss in stainless bowl with all other ingredients. Refrigerate 1 hour. Stir prior to serving. Servings 4
